- 3 pounds zucchini, cubed
- 5 tablespoons unsalted butter, divided
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 eggs, beaten
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup fresh white bread crumbs
