  • ½ cup Spanish olive oil
  • 2 medium onions, finely chopped
  • 2 red bell peppers, cored, seeded, and julienned
  • 4 large garlic cloves, minced
  • 2 ounces prosciutto, julienned
  • 3 pounds ripe tomatoes, cored, peeled, seeded, and chopped (or use 2 pounds canned tomatoes, seeded and chopped)
  • ½ cup ground blanched almonds
  • 1 teaspoon dried thyme
  • ½ teaspoon saffron threads (or a pinch of ground saffron)
  • 2 sprigs fresh rosemary, leaves only, finely choppad
  • 2 teaspoons coarse salt, or more to taste
  • ½ teaspoon freshly ground black pepper, or more to taste
  • ½ teaspoon red pepper flakes
  • 1 cup dry white wine
  • 3½ cup fish stock or half clam juice and half water
  • Juice of ½ lemon
  • 12 clams, well scrubbed
  • 12 mussels, well scrubbed
  • 8 jumbo shrimp in the shell
  • 1 pound scallops
  • 1 pound squid, cleaned and cut, into rings
  • 6 lemon wedges, for garnish
  • Wedges of grilled country bread for serving
