Wilted spinach with pine nuts & raisins
- 1kg spinach leaves, washed
- olive oil
- 80g pine nuts , toasted
- 80g raisins , soaked in hot water for 20 minutes until plump, then drained
- 2 garlic cloves , finely chopped
- 1 tbsp finely chopped oregano leaves
- 125ml olive oil
- 2 tbsp red wine vinegar
