Whole Wheat (or Soba) Noodles with Peanut Sauce, Chicken & Vegetables
- 4 tbsp sesame oil, divided
- 1/2 cup peanut butter
- 1/3 cup soy sauce
- 3 tbsp rice wine or sherry
- 1 tbsp water
- 1 1/2 tbsp rice vinegar
- 1 tbsp canola oil
- 1 tbsp packed brown sugar
- 1 tbsp minced fresh ginger
- 1 garlic clove, minced
- 1/2 tsp red chile flakes (optional)
- 1 lb. whole wheat spaghetti or soba noodles
- 1 cooked chicken breast, cut into bite-sized pieces
- 1 red bell pepper, cut into thin strips
- 1 cup sugar snap peas, trimmed
- 1 large carrot, julienned
- 1 tbsp toasted sesame seeds
