  • 2-1/2 tablespoons yeast
  • 5 tablespoons sugar
  • 2 tablespoons kosher salt
  • 3-1/2 cups hot water
  • 2 cups white flour
  • 1 tablespoon olive oil
  • 3 quarts water
  • 2 tablespoons brown rice syrup (optional, helps shine up the bagels)
  • 1 egg white, beaten with 1 tablespoon water
