Warm roasted veg with spiced crushed chickpeas
- 1 small butternut squash , chopped into bite-sized pieces
- 1 cauliflower , broken into small florets
- 2 large parsnips , quartered lengthways
- olive oil
- 1 tsp cumin seeds
- 1 tsp crushed chillies
- 2 x 400g tins chickpeas , drained and rinsed
- 4 tbsp low-fat plain yogurt
- a small bunch flat-leaf parsley , roughly chopped
- a small bunch coriander , roughly chopped
- rice, couscous or flatbreads , to serve
