Warm Seafood Couscous Salad
- 200g of couscous
- 400ml of vegetable stock
- 1 tsp of turmeric
- 1 tsp of curry powder
- 500 ml of boiling water
- 2 salmon fillets
- 1 lime
- about 1 tbsp of chopped coriander
- 2 tbsp of olive oil
- 1/2 medium onion sliced
- 1/2 red pepper sliced
- 1/2 tsp of chilli flakes
- 150g of large cooked prawns
- Coriander, parsley and spring onions chopped, to garnish
- salt and black pepper to taste
- 2 hard boiled eggs, quartered (optional)
