Vegan Butternut and Apple Bisque
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 large onion, diced
- 1 tablespoon fresh grated and peeled ginger
- 2 large carrots, peeled and chopped
- 1 large apple, peeled, cored and chopped
- 1/4 teaspoon ground cinnamon
- 2 medium butternut squash, peeled, seeds removed, chopped
- 3 1/2 cups vegetable broth
- Salt and pepper, to taste
