Urad Dal with Spices
- 2/3 cup urad dal, rinsed
- 1-inch piece ginger, grated or minced
- 2 1/2 cups water
- 1 teaspoon sea salt
- 1 teaspoon fresh ground black pepper
- 2 tablespoon ghee, butter or oil
- 1 clove garlic, minced or crushed
- 2 fresh green chilies, seeded and finely chopped
- 2 dried whole red chilies, broken into pieces
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne
- pinch of asafetida
- pinch of saffron
- small handful of dried curry leaves
- a few teaspoons fresh dill for garnish
