Ingredients:
  • 2/3 cup urad dal, rinsed
  • 1-inch piece ginger, grated or minced
  • 2 1/2 cups water
  • 1 teaspoon sea salt
  • 1 teaspoon fresh ground black pepper
  • 2 tablespoon ghee, butter or oil
  • 1 clove garlic, minced or crushed
  • 2 fresh green chilies, seeded and finely chopped
  • 2 dried whole red chilies, broken into pieces
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne
  • pinch of asafetida
  • pinch of saffron
  • small handful of dried curry leaves
  • a few teaspoons fresh dill for garnish
