  • 1 small Lebanese or Persian cucumber, peeled, seeded and finely diced
  • 1 large shallot, peeled and finely diced
  • 2 tablespoons finely chopped flat leaf parsley leaves
  • ½ teaspoon dried mint
  • 1 heaped teaspoon hot Turkish red pepper paste (see Notes)
  • ½ teaspoon pomegranate molasses
  • 1 teaspoon red wine vinegar
  • ¼ cup extra virgin olive oil
  • Sea salt
  • Freshly ground black pepper
  • Pomegranate seeds to garnish (optional)
