Ingredients:
  • 1 pound fresh small okra, bottoms trimmed
  • 3 tablespoons white wine vinegar
  • 1 tablespoon salt
  • 1 tablespoon unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 4 to 5 chicken breast halves on the bone (about 3¼ pounds total)
  • 2 medium size onions, thinly sliced
  • 2 teaspoons finely ground coriander seeds
  • 1 teaspoon Turkish red pepper (see Notes)
  • 5 large garlic cloves, pounded in a mortar with 1 teaspoon salt until mushy
  • ½ teaspoon sugar
  • 1 tablespoon dried oregano
  • 1 tablespoon tomato paste
  • 1½ pounds ripe tomatoes, peeled, seeded, and chopped
  • Juice from 1 lemon
  • Freshly ground black pepper to taste
