- 2 tablespoons unsalted butter
- 2 medium onions, peeled and finely chopped
- 2 5-ounce cans tuna, drained and flaked
- 1 tablespoon capers, drained, rinsed, mashed
- 3 tablespoons grated Parmesan cheese
- 3 tablespoons flat-leaf parsley, chopped
- Kosher salt and freshly ground black pepper
- 2 cups olive oil, for frying
- 8 (6-inch) prepared egg roll wrappers
- 1 egg white, lightly beaten with 1 teaspoon of water
- 8 large eggs
