  • 2 plum tomatoes, peeled, seeded and diced
  • juice from 1 large lemon
  • polenta Parmesan croutons (recipe below)
  • 3 cups water
  • 1 1/2 cups yellow cornmeal
  • 1 teaspoon cayenne
  • 1 teaspoon sea salt
  • 2 teaspoons olive oil
  • fresh cracked black pepper to taste
  • 1/4 cup fresh grated Parmesan cheese
