  • 2 cups canned, peeled plum tomatoes in juice, or 2 pounds fresh, sweet, mature vine-ripened tomatoes
  • ¼ cup extra virgin olive oil
  • 2 large cloves garlic, minced
  • 1 small yellow onion, minced
  • 4 tablespoons chopped fresh Italian parsley
  • 2 tablespoons tomato paste
  • ½ cup good-quality dry white wine
  • 1 teaspoon chopped fresh oregano, or ½ teaspoon crumbled dried oregano
  • 1/8 teaspoon red pepper flakes
