  • 1 3" piece of ginger, peeled, cut into 1/4" slices
  • 1 dried chile de árbol
  • 2 1/2 pound center-cut, skin-on pork belly
  • 1 cup yellow quick grits
  • 1/2 cup grated cheddar
  • 2 tablespoons (1/4 stick) butter
  • Kosher salt and freshly ground black pepper
  • 1/2 cup chopped bacon
  • 1 tablespoon unsalted butter
  • 4 baby bok choy, sliced in half lengthwise
  • 1 cup chicken stock
  • 1 teaspoon plus 1/4 cup Sriracha, divided
  • Vegetable oil (for frying)
  • 1/4 cup honey
  • 1 cup all-purpose flour
  • 1 tablespoon unsalted butter
  • 4 large eggs
  • 2 scallions, sliced on a diagonal
