Ingredients:
  • 12 eggs
  • smoked chilli sambal
  • butter
  • 1 green chilli , sliced into rounds
  • 1 bunch spring onion , sliced
  • coriander
  • 18 raw tiger prawns , peeled, cut in half lengthways and de-veined
  • 1 lemongrass stalk, trimmed, bashed gently and cut into 4
  • 30g ginger , sliced
  • 3 lime leaves , shredded
  • 1 tsp chilli flakes
  • 1 tsp fish sauce
  • 100g golden caster sugar
  • 15g sea salt
  • rapeseed oil , for deep frying
  • 250g red peppers , sliced
  • 250g onions , peeled and sliced
  • 250g cherry tomatoes
  • 80g ginger , cut into fine strips
  • 80g garlic , sliced
  • 25g dried shrimps , finely ground in a spice grinder or pestle and mortar
  • 1 tsp chipotle chilli flakes (or 1 tsp hot smoked paprika)
  • 125g tamarind paste
  • 3 tbsp fish sauce
