  • 3-4 large russet potatoes (2 lbs.)
  • 2 Tbs. whole cumin seeds
  • 2 tsp. ground coriander
  • ¼ tsp. cayenne pepper
  • 2 tsp. turmeric
  • 2 tsp. whole mustard seeds
  • 2 small, hot green chiles, trimmed and finely chopped
  • 1-inch piece of fresh ginger root, peeled and chopped (about 2 Tbs.)
  • 2 lbs. fresh red tomatoes
  • ¾ cup chopped fresh cilantro leaves
  • 3-4 Tbs. fresh lemon juice
  • 1 Tbs. Major Grey’s chutney
