  • 7oz (200g) beef kidney, trimmed
  • 3 tbsp all-purpose flour
  • Salt and freshly ground pepper
  • 1 onion, chopped
  • 6 oz (175g) button mushrooms, quartered
  • 2 tbsp Worcestershire sauce
  • ¾ cup plus 2 tbsp beef stock, cold, as needed
  • 6-cup ovenproof bowl, steamer or deep pan with a lid
