- thumb-size piece ginger , cut into matchsticks
- 300g Brussels sprouts , halved
- 250g beansprouts
- small bunch spring onions , sliced diagonally
- 1 tbsp clear honey
- 2 tbsp soy sauce , plus extra to serve
