  • 12 Bibb lettuce leaves, washed and dried
  • 1 (4-ounce) package of Thai rice noodles, cooked according to package directions
  • 1 cup grated carrot
  • 1/3 cup fresh mint, coarsely chopped
  • 1/3 cup fresh cilantro, stems removed and coarslely chopped
  • 1/3 cup fresh basil, coasrsely chopped   
  • 24 large shrimp, cooked, peeled and deveined (tails removed) and sliced, lengthwise
  • 1/2 cup hoisin sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon hot chili oil
  • Vegetable peeler (to peel ginger)
