  • 1 piece (3 to 4 ounces) Serrano ham or prosciutto, finely diced
  • 4 large garlic cloves, minced
  • 1 medium-size Yukon Gold potato, peeled and cut into ½-inch lengths
  • 1/3 cup dry sherry
  • 1¼ to 1½ cups chicken stock or broth, or water
  • Coarse salt (kosher or sea) and freshly ground black pepper
  • 2 tablespoons minced fresh flat-leaf parsley
  • 1 squeeze of fresh lemon juice (optional)
