Spinach and Omelette Curry
- 1 tablespoon butter
- 6 large eggs
- 1 teaspoon garam masala
- 1/2 teaspoon sea salt
- 1 bunch fresh spinach, trimmed and chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced or crushed
- 1-inch piece fresh ginger, minced or grated
- 3 fresh green chilies, seeded and minced

- 1/4 teaspoon cayenne
- 2 large tomatoes, chopped
