  • 5 large eggs
  • 1/3 cup fresh bread crumbs
  • ½ tsp freshly grated nutmeg
  • Salt and freshly ground black pepper
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 garlic clove, minced to a paste
  • Salt and freshly ground black pepper
  • 2 oz (60g) frisee
  • ½ seedless cucumber, cut into sticks
  • Individual timbale molds or ramekins
