  • 1 tablespoon vegetable oil, preferably peanut
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons minced garlic
  • ½ teaspoon crushed red chile, such as piquin
  • ¼ cup chicken or vegetable broth
  • 8 ounces mustard greens, stems removed and coarsely chopped; or substitute Asian baby greens
  • 2 ounces straw mushrooms
  • 1 cup mung bean sprouts
  • 1 tablespoon toasted sesame seeds for garnish
  • 1 tablespoon balsamic vinegar
  • 4 teaspoons rice vinegar
  • 1 tablespoon peanut oil
  • 2 teaspoons light soy sauce
  • 1 green onion, chopped
  • ¼ teaspoon dark sesame oil
  • ¼ teaspoon crushed red chile, such as piquin or Santaka
  • ¼ teaspoon sugar
