  • 1 teaspoon whole fennel seeds
  • ½ teaspoon whole cumin seeds
  • 3 medium (12oz) very ripe tomatoes, peeled and finely chopped, or 14oz canned tomatoes
  • 1 teaspoon sugar, less if using fresh tomatoes
  • 1 tablespoon coriander seeds, freshly ground
  • ¼ teaspoon ground turmeric
  • 1/3 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/3 cup (2oz) raisins
  • 1½ lb fresh spinach, weighed without stalks
  • 1-1½ oz butter
  • About ¾ cup (6-8 fl oz) light cream
  • Gluten-free roux (optional)
  • Salt and freshly ground black pepper
  • A little freshly shredded nutmeg
  • 4 leeks
  • 2 yellow bell peppers
  • ½ oz butter
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon water
  • Salt and freshly ground black pepper
  • 3¼ cups (8 oz) dried plain gluten-free lasagne
  • Salt and freshly ground pepper
  • 1 cup (2 oz) shredded Parmesan
  • Few pats of butter
