Ingredients:
  • 1 pound dried black beans, picked over and rinsed
  • 2 tablespoons ground cumin
  • 1½ tablespoons mild chili powder
  • 1 tablespoon ground coriander
  • 1/8 to ¼ teaspoon cayenne pepper, to your taste
  • 2 teaspoons unsweetened cocoa powder
  • 1 tablespoon unbleached all purpose flour
  • 1/3 cup flavorless vegetable oil
  • 2 large onions, chopped
  • 1 large green bell pepper, seeded and chopped
  • 2 to 3 cloves garlic, to your taste, minced
  • 1 cup chopped canned tomatoes or tomato puree
  • 2 cups V-8 or other tomato juice
  • 1 teaspoon salt, plus more to taste
  • 1 cup fresh or canned chopped green chiles
  • 2 tablespoons tomato paste
  • 1½ teaspoons dried oregano
  • 1½ teaspoons dried basil
  • 1 bay leaf
  • 2 tablespoons firmly packed light brown sugar
  • Juice of 1 orange
  • 1 tablespoon cider vinegar
  • 3 tablespoons chopped fresh parsley leaves
