Soy-glazed salmon with pea, carrot & edamame salad
- 2 tbsp soy sauce
- 2 tsp caster sugar
- 2 skinless salmon fillets
- 100g frozen peas , blanched and drained
- 100g frozen edamame beans, blanched and drained
- 3 carrots , peeled and cut into matchsticks
- 1 tbsp mirin
- 2 tsp sesame oil
- 1 tbsp soy sauce
- a small chunk ginger , julienned
