  • 50g blossom honey
  • 2 pinches dried lavender
  • olive oil
  • 1 large aubergine , peeled and cubed
  • 2 tomatoes , skinned, seeded and diced
  • 1 garlic clove , chopped
  • 30g capers , drained and chopped
  • 30g black olives , chopped
  • basil , chopped to make 2 tbsp
  • coriander , chopped to make 2 tbsp
  • parsley , chopped to make 2 tbsp
  • 10ml raspberry or sherry vinegar
  • 50ml extra-virgin olive oil
  • 40g dried figs , finely diced
  • 50g unsalted butter
  • 45g cheddar , grated
  • 10g parmesan , grated
  • 1 egg yolk
  • 50g plain flour
  • 150g log soft goat's cheese
