  • 2 red bell peppers, seeded, deribbed, and cut into 1-inch squares (about 24 pieces)
  • ½ pineapple, peeled, halved, cored, and cut into 1-inch cubes (about 24 pieces)
  • 6 tablespoons extra virgin olive oil, plus more for brushing
  • ½ tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 1½ tablespoons minced fresh cilantro
  • ½ teaspoon kosher or sea salt
  • ½ teaspoon sugar
  • ½ teaspoon freshly ground pepper
