  • 1¼ cups whole milk
  • ¼ cup maple syrup or honey
  • ½ cup cold water
  • 2 tbsp vegetable oil, plus more for the bowl
  • 2 tsp salt
  • 3¼ cups bread flour
  • 2/3 cup old-fashioned (rolled) oats
  • 2/3 cup wheat, barley, triticale, or rye flakes
  • Two ¼ oz (7g) envelopes instant yeast
  • 1¾ cups whole wheat flour, as needed, plus more for kneading
  • 1/3 cup cooked rice, preferably brown rice (optional)
  •  9 × 5 in (23 × 13cm) loaf pans
