Sea trout & herb fishcakes
- 500g skinless sea trout fillets
- 500g floury potatoes , such as King Edward or maris piper, peeled
- 6 spring onions , finely shredded
- good handful soft herbs, such as chives and parsley, finely chopped
- 2 lemons , 1 zested, 1 cut into wedges
- 1 egg , beaten
- 100g fresh breadcrumbs
- oil for frying
