Scalloped Potatoes with Coconut Milk and Mushrooms
- 1 lb (1/2 kg) potatoes, sliced
- 13.5 oz (400 ml) can coconut milk
- 2 tablespoons red chili and vinegar paste (recipe below)
- 1 1/2 teaspoons sea salt
- 4 green onions, thinly sliced
- 6 to 8 button mushrooms, sliced
- 10 fresh curry leaves (optional)
- 1/2 cup red wine vinegar
- 1 teaspoon tamarind paste
- 1 cup dried whole red chilies
- 1 tablespoon cumin seeds
- 1 teaspoon black peppercorns
- 1/2 teaspoon whole cloves
- 1/2 teaspoon ground turmeric
- 10 cloves garlic, cut in half
- 2-inch piece fresh ginger, chopped
- 6-inch cinnamon stick, broken into pieces
