  • 1¾ pounds shiitake mushrooms, stems removed, caps wiped clean and chopped coarsely
  • 8 ounces portobello mushrooms (1 or 2 large), stems removed, caps wiped clean and chopped coarsely
  • 2 large garlic cloves, minced
  • 1¾ cups heavy cream
  • 4 extra-large eggs, lightly beaten
  • 1 tablespoon white truffle oil (optional)
  • ¼ to ½ cup freshly grated Parmigiano-Reggiano cheese
