Samosa-Style Stuffed Baked Potatoes
- 2 large Russet or baking potatoes
- 1/4 cup heavy cream, vegetable stock or water
- 1/2 cup fresh or frozen peas
- 2 tablespoons olive oil
- 1 teaspoon black mustard seeds
- 1 teaspoons cumin seeds
- 1 small onion, finely chopped
- 1 small carrot, cut into small cubes
- 1 small clove garlic, finely minced
- 1 - 2 fresh green chilies or jalapeos, seeded and minced
- 1-inch piece fresh ginger, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2/3 teaspoons chat masala (see note)
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne
- pinch of asafetida
- 2/3 teaspoon sea salt
- olive oil for brushing
