Salmon fillet with summer herb mayonnaise
- 250g new potatoes
- olive oil
- 2 salmon fillets
- 2 heaped tbsp mayonnaise
- 1 egg yolk
- tip of a tsp Dijon mustard
- 2 large handfuls baby watercress , finely chopped
- 3 tbsp flat-leaf parsley , finely chopped
- 1 sprig tarragon , stripped of leaves, finely chopped (discard stem)
- 5 basil leaves , finely chopped
- 5 mint leaves, finely chopped
- -1 tsp lemon juice
