  • ¾ cup extra virgin olive oil
  • Salt and freshly ground pepper
  • 3 tbsp white wine vinegar
  • 1½ tbsp fresh lemon juice
  • 2 tsp Dijon mustard
  • 1 garlic clove, finely chopped
  • 2 romaine lettuce hearts, trimmed and torn into bite-sized pieces
  • 8–10 basil leaves
  • 9 oz (250g) plum tomatoes, quartered lengthways
  • 12 Kalamata olives
  • 8 anchovy fillets in olive oil, drained
  • 1 small red onion, finely sliced
  • 4 large, hard boiled eggs, peeled and quartered
