Roasted Garlic Potato Soup with Smoked Salmon
- 1 whole head garlic
- 2 tablespoons olive oil
- 1/4 cup diced onion
- 1 carrot, finely chopped
- 4 cups chicken stock
- 4 large new potatoes, cut into 1/2 inch cubes
- 1/2 teaspoon ground dried rosemary
