- 4 duck breasts , skin on
- 4 tbsp maple syrup
- 1 tbsp sherry vinegar
- 1 tbsp groundnut oil
- 1 tbsp hazelnut oil
- 225g wild mushrooms (girolles, trompettes, ceps, oyster mushrooms)
