Roast chicken with peverada sauce
- 1 chicken , jointed
- olive oil
- 1 onion , finely chopped
- 1 garlic clove
- 1 rosemary stalk, finely chopped
- 4 sage leaves, finely chopped
- 100g chicken livers , cleaned and chopped
- 1 Italian sausage , skinned and chopped, or 2 slices soft salami, chopped
- 2 anchovies , finely chopped
- 1 tsp golden caster sugar
- 1 lemon , halved
- 3 tbsp red wine vinegar
- 2 handfuls flat-leaf parsley , chopped
- treviso, radicchio or red endive , dressed to serve
