Ingredients:
  • ½ pound dried chick peas, rinsed, picked over, and soaked at least 3 hours, or overnight (or use 3 cups canned chick peas, drained)
  • 2 quarts water
  • 1 bay leaf
  • 3 ounces smoked slab bacon, rind removed, diced
  • 1 large onion, finely chopped
  • 1 yellow bell pepper, cored, seeded, and finely chopped
  • 5 garlic cloves, finely chopped
  • 1½ cups long-grain white rice
  • ¼ cup dry sherry
  • 1½ teaspoons coarse salt
  • 1 teaspoon freshly ground black pepper
