Quinoa and Grilled Zucchini
- 1 large avocado, ripe
- juice of 1 lime
- 1/4 cup lightly packed cilantro
- 1 clove garlic
- 1/4 cup plain yogurt
- 3/4 cup water
- 1/2 teaspoon fine grain sea salt
- 3 large eggs
- 1 large zucchini, cut into 3/4-inch thick coins
- 1/4 cup extra-virgin olive oil
- couple pinches of fine grain sea salt
- 2 cups quinoa, cooked, room temperature
- 1/4 cup pine nuts, toasted
- 1/4 cup goat cheese, crumbled
- a bit of chopped cilantro for garnish
