  • 3 large onions, peeled and finely chopped
  • 1 pound tomatoes, peeled, seeded and chopped
  • 1 pound mascarpone cheese, at room temperature
  • 4 ounces cream cheese (priferably Philadelphia brand), at room temperature
  • 1 tablespoon chopped fresh cilantro
  • ½ teaspoon chopped fresh oregano or ¼ teaspoon dried
  • 1/3 cup grated Parmesan cheese
  • Boiled white rice, for serving
