Provencal Potato Salad
- 2 lbs small waxy potatoes or fingerling potatoes (ideally those tiny potatoes that are no more than an inch or so long)
- 1 clove garlic, minced
- 1/4 cup chopped parsley
- 1 Tbsp capers
- 1/4 cup green olives, sliced
- 2 Tbsp sherry vinegar or white wine vinegar
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1 teaspoon herbes de provence
- 1 teaspoon anchovy paste (1 to 2 anchovies, mashed)
- 2 teaspoons Dijon mustard
- 1/2 cup olive oil
