Prawn & brandy soup
- 250g whole raw prawns
- 2 tbsp olive oil
- 1 fennel bulb , chopped
- 1 celery stalk, chopped
- 1 carrot , chopped
- 2 tbsp brandy
- 100ml white wine
- 200ml passata
- 500ml fish stock
- 150ml double cream , plus a drizzle to serve
- scattering of dill , to serve
