Pot-Roast Pheasant Ragu

- x1 Pheasant
- 4 rashers of Bacon, roughly chopped
- 1 Onion, finely chopped
- 2 Carrots, diced
- 2 cloves of Garlic
- 2 Bay Leaves
- 250ml of Chicken Stock (or 250ml water and a Chicken Stock Cube)
- x1 400g tin of Plum Tomatoes
- 150ml White Wine
- 2 tbs Tomato Puree
- 2 tbs Butter
- Salt and Black Pepper
- 350g Tagliatelle
- 25g Parmesan (optional for grating)
