Pork Pozole Recipe

Ingredients:
  • 4 slices bacon
  • 2 lbs trimmed pork shoulder, cut into 1-inch (2.5 cm) cubes 1 kg
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp (15 mL) dried oregano leaves 
  • ½ tsp (2 mL) cracked black peppercorns 
  • 2 tsp (10 mL) finely grated lime zest
  • 1 can (14 oz/398 mL) no salt added diced tomatoes with juice
  • 2 cups (500 mL) reduced-sodium chicken stock
  • 1 can (29 oz/824 mL) hominy, drained and rinsed
  • 2 poblano or green bell peppers, seeded and diced (see Notes)
  • 2 dried ancho or guajillo chiles
  • 2 cups (500 mL) boiling water
  • 2 tbsp (25 mL) freshly squeezed lime juice 
  • 2 tbsp (25 mL) finely chopped cilantro
  • 1 chipotle pepper in adobo sauce, optional
  • Salt
  • Shredded lettuce, optional
  • Chopped radish, optional
  • Chopped red or green onion, optional
  • Fried tortilla strips, optional
