Pomegranate Chicken with Jasmine Rice
- 1.5 lbs chicken thighs
- 2 tsp oil
- 1 cup pomegranate juice
- 1 tbsp pomegranate molasses
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- tsp smoked chili powder (or regular chili powder if you cant find smoked)
- 2 tsp cornstarch mixed with 2 tbsp water
- minced fresh parsley for serving
- cooked jasmine rice for serving
