Peppers baked with lamb & rice
- 400g lean minced lamb
- olive oil
- 1 large onion , sliced
- 2 garlic cloves , sliced
- tsp cinnamon
- tsp ground cumin
- tsp dried oregano
- a pinch chilli flakes (optional)
- 150g cooked basmati rice (use a pack of microwaveable or cook 75g raw rice and cool)
- 1 tbsp tomato pure
- 200ml chicken stock
- 2 tbsp flat-leaf parsley , chopped
- 4 tbsp pine nuts
- 4 green, yellow or red peppers
