  • 6 firm-ripe Bartlett pears, about 2½ pounds
  • 2 cups sugar
  • 1 whole vanilla bean, not split
  • 6 ounces canned almond paste, cut into ½-inch cubes
  • 1/3 cup sugar
  • 3 large eggs
  • 6 tablespoons (¾ stick) unsalted butter, softened
  • 1 tablespoon Kirsch
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour (spoon flour into dry-measure cup and level off)
  • 1 cup apricot preserves
  • 2 tablespoons water
  • Toasted sliced almonds for finishing
  • One 12 x 18-inch jelly-roll pan
