Ingredients:
  • 2 tablespoons roasted peanut or vegetable oil
  • 2 large onions, diced
  • 2 large bell peppers, 1 red and 1 green, diced into ½-inch chunks
  • 2 teaspoons chopped ginger
  • 2 sweet potatoes, peeled and cut into 1-inch chunks
  • 3 large garlic cloves, finely chopped
  • Salt and freshly ground black pepper
  • ¼ teaspoon cayenne pepper or red pepper flakes, or more to taste
  • 2 cups crushed tomatoes in sauce
  • 5 cups water, or chicken stock, or Basic Vegetable Stock
  • ¾ cup peanut butter
  • 1 box or ½ carton tofu, preferably soft
  • 2 cups cooked rice
  • 1 cup sliced scallions, including the firm greens
